Thai Green Papaya Salad


2 Cups Shredded Green Papaya

8 Cherry Tomatoes

2 Long Beans or 6 Green Beans, washed and cut into 2″ long

2 Thai Chili

2 Cloves Garlic

1  1/2 tablespoons Fish Sauce

1 tablespoon Granulated Sugar

2 tablespoons toasted peanuts

Special equipment- mortar and wooden prestle


Pound garlic in mortat then add chili, pound a couple times, add green beans and cherry tomatoes, pound a few more times until the green beans and tomatoes are bruised.  Add papaya and pound a few more times, add fish sauce, lime juice, and sugar.  Use the pestle to push the mixture up in the mortoar and hold the spoon on the left hand to push the mixture down and turn until the mixture is mixed well.  Season to taste.  Serve with fresh cabbage, lettuce, and sprinkle peanuts over the salad.
