Makes about 1 1/2 cups
- 2 red bell peppers, finely chopped (about 2 1/2 cups)
- 3 large tomatoes (2 cups when grated)
- 5 cloves garlic, minced (1 solidly packed tablespoon when minced)
- 1/2 yellow onion, finely chopped (2/3 cup when chopped)
- 1cup sherry vinegar
- 1/2cup granulated white sugar
- 1/2cup brown sugar
- 2teaspoons freshly squeezed lemon juice
- 1/8 -1/4teaspoon ground cayenne pepper
- 1/8teaspoon Kosher salt
- 1/8teaspoon ground black pepper
- Put a very wide-mouthed pot on the stove. This is important, otherwise the mixture won’t boil down very well.
- Cut the tomatoes in half and grate them on a rough grater to remove the skins. You should get about 2 cups grated tomatoes when done. Throw them in a wide mouthed pot with the rest of the ingredients and bring to a boil.
- Reduce to an active simmer and cook until thick and syrupy (about 45 minutes). Let cool to room temperature before using to let the jam thicken and the flavors to meld. Refrigerate, assuming it lasts longer than 1 meal.
BAKED HONEY SRIRACHA WINGS
These Sriracha wings would be the perfect kind of finger foods for your next football gathering, although you could have them all year long!

2 pounds chicken wings
2 tablespoons unsalted butter, melted
1 tablespoon vegetable oil
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
1 tablespoon chopped fresh cilantro leaves
Sesame seeds, for garnish
FOR THE HONEY SRIRACHA GLAZE
5 tablespoons unsalted butter
1 tablespoon all-purpose flour
1/4 cup honey
1/4 cup Sriracha*
1 tablespoon soy sauce
Juice of 1 lime
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
To make the glaze, melt butter in a small saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute. Stir in honey, Sriracha, soy sauce and lime juice. Bring to a boil; simmer until slightly thickened, about 1-2 minutes.
In a large bowl, combine wings, butter, vegetable oil, garlic powder, salt and pepper, to taste.
Place wings onto the prepared baking sheet and bake for 25-30 minutes, using metal tongs to turn at halftime. Brush wings with Sriracha glaze and broil for 3-4 minutes, or until crisp and crusted.
Serve immediately, garnished with cilantro and sesame seeds, if desired.
