Charred Broccoli Caesar Salad

Charred Broccoli

1 whole head Broccoli (outer layer of stalk peeled)
1/4 cup Extra Virgin Olive Oil
2 tsp Salt
1 tsp Black Pepper
1 Lemon
In medium size

In medium size bowl, pour olive oil in bottom of bowl, place the top of broccoli head into oil, turning to coat all
florets as much as possible. Remove and sprinkle top of broccoli with the salt and pepper. Cut broccoli head in half
from top to bottom of stalk. Place on Grill or Gas stove top over high flame to char the broccoli. This should only
take a few minutes to achieve. Set aside to cool.
When cooled, cut florets into 1 inch bite-sized pieces and dice

Caesar Dressing

2 cups prepared Mayonnaise
2 TBLS prepared horseradish
5 cloves garlic
1/4 tsp. Cayenne pepper
1 cup Flat Leaf Parsley, chopped
Zest and juice of 2 Lemons
1/2 grated Parmesan Cheese
1 TBLS Worcestershire sauce
1/2 tsp salt
1/4 tsp black pepper

Place all ingredients into food processor and pulse a few times. Scrape down sides and run for about 30 more seconds.

Crouton Dust

1/2 cup bread crumbs
1/2 cup Parmesan Cheese, grated
2 tsp granulated garlic
2 tsp dry oregano

Place ingredient into small bowl to mix and spread evenly onto well oiled sheet pan. Place into 400F oven for 10-12
minutes stirring halfway through cooking. Mixture should be browned and crispy. Cool and place in food processor.
Pulse a few times to break up large chunks.
*Can substitute store bought croutons by placing in food processor and pulsing until crumbled.
